Yesterday about 50 members of the Roxborough Windflowers Club enjoyed a nutrition lecture, cooking demonstration and healthy lunch at South Denver Cardiology.
Susan Buckley, Registered Dietitian (RD) gave an informative talk called “Beautiful Skin from the Inside Out”. She explained how our diet can promote not only heart health, but also skin health. Susan covered a lot of material during the 45 minute presentation, but she had a “knack” for breaking down complex concepts into components that were easy to understand. Then Richard Collins, MD, FACC (a.k.a. The Cooking Cardiologist) demonstrated how to properly cook the grains and prepare the dressing for our heart-healthy lunch called “Beautiful Salad”. Dr. Collins, a Roxborough resident, also taught us about various cooking oils and which pans are the best. His practical approach inspired us to add more servings of fruits and vegetables to our diet and start cooking healthier meals for our families.
Finally, we got to taste the delicious salad. It was colorful, beautifully presented, and filling. The no-bake desert was a combination of almonds, chocolate and blue berries. That “touch of sweetness” was so good, many of us splurged and had a second piece.
